Vias can be protected by covering with solder mask. The exposed metal may be corroded by oxidation, which has nothing to do with the high temperature you mentioned. High temperature will accelerate oxidation corrosion, which should be clear to middle school students. However, PCB is only exposed to high temperature for a short period of time during the welding process, so the factors to be considered for protection are different. It is recommended that you read the relevant information carefully first, and don't imagine it yourself.

Now the entanglement is that if the surface is treated with HASL, and then the exposed pads are attached with electronic components, but there are many vias and some TPs without solder paste, then after the board is completed, will it not oxidize in actual applications in the future? Or is the PCB surface treatment only to prevent oxidation at high temperatures?
