Has anyone worked on a DMX512 system? Can anyone tell me how the decoder identifies which set of data belongs to it during the decoding process?

I suggest you read the protocol standard document carefully, it is impossible to do it without address. Don't just look at one frame, look at a complete data packet consisting of multiple frames.
