This sensor seems to be a bridge circuit. If so, then use an instrumentation amplifier to amplify the sensor signal. Note that the power supply to the sensor must be stable enough.

The manual should contain a wiring diagram or wiring instructions. The gain can be determined based on the sensor output range and the required signal amplitude, and can be achieved using an op amp.
