In the process of cracking down on "gutter oil", the gutter oil detection index system developed by the food safety monitoring unit played a significant role. The detection personnel used modern analytical and testing methods such as chromatography, spectral analysis, physical and chemical analysis and gene identification technology to conduct a comprehensive screening of more than 80 technical indicators, and identified four categories of polycyclic aromatic hydrocarbons, cholesterol, conductivity, specific genes, and more than 20 items with important identification significance. The detection system established on this basis provides effective technical guarantees for the safety of edible oil for the people.
