Hello, I want to use a microcontroller to control the DAC to output 8-channel voltage. The selected DAC is LT2600, so which microcontroller should I choose? I don't have much knowledge of microcontrollers.

The choice of microcontroller seems to be less important than the choice of DAC. Without finding out the LT2600 you chose, it is impossible to know whether the DAC you chose can meet the requirements of 8-channel voltage.

LTC2600 is a DAC with SPI serial input. It is more convenient to choose a microcontroller with SPI interface. Just program according to the LTC2600 datasheet.
