I am preparing to apply to study abroad, and I am a little unsure about the direction of my major. My current major is mechanical electronics. I would like to ask seniors whether robots are better or DSP in terms of employment prospects? Is control better or signal better?

Haha, I can't say I'm a senior, but I think it depends on your own interests: are you going to engage in upstream IC design, or downstream electronic applications, such as communications, computers, automotive electronics, etc., which seem to be very popular. When it comes to talent demand, the most scarce thing nowadays is IC design talent. If you can work in a foreign IC design company for a period of time after graduation, it will be even more valuable.
