Bread Moisture Tester
Some breads have soft and some have crispy textures. The key to ensuring the crispness of the bread crust is the moisture content. This helps to prolong the crispness of the bread. In the past, the most common method for measuring bread moisture was the oven method. However, this method takes a long time, up to 10 hours or even 20 hours, which is undoubtedly a time-consuming and inefficient task. The bread moisture meter that began to appear 10 years ago and has become increasingly mature measures the moisture content, and it is found that the latter is more efficient than the former. By using this bread moisture meter, I found that this moisture meter is very simple and convenient to operate. Below I will share some of my experiences and insights in using this instrument for reference by bakers and bakeries.
Bread Moisture Tester Test Principle and Parameters
1. The ring halogen lamp can directly heat the inside of the material, so that the moisture in the butter is evaporated quickly. Compared with the traditional oven method, the efficiency is much higher.
2. Using electromagnetic force weighing sensor imported from the United States, the weighing value is stable and accurate, and the service life is long.
3. The instrument has an exquisite and elegant appearance, and its grade is far higher than that of the domestic peers. It can be connected to a computer and an RSS printer to print and keep records of data, making it convenient for users to archive data as a reference for test data.
4. Unique temperature control heating system heats and dries evenly, making the test results more accurate.
5. Automatic operation, convenient and fast. After the measurement is completed, the alarm will be given and the test process can be operated with one button.
6. Pure stainless steel windproof chamber cover is resistant to high temperature, easy to clean, and reusable, avoiding unnecessary consumables and saving costs.

How to use the bread moisture tester
Test bread crumbs 1: In order to make the bread moisture meter dry the bread thoroughly during the test, we tear the bread into crumbs so that the temperature can penetrate. Take 5 grams of bread crumbs and put them in a stainless steel tray. Use tweezers to spread the bread crumbs evenly. To avoid the bread from burning after baking, we set the temperature to 105℃ and press the "START" button to start the test. The test ends after 4 minutes and 28 seconds. The test data shows 18.57%;
In order to obtain more stable data results, we waited for the bread moisture meter to cool down before the second test. When the temperature of the instrument dropped below 40 degrees, we took 5 grams of bread crumbs in the stainless steel tray and spread the bread crumbs evenly. This time we set the temperature at 120 degrees and pressed the "START" button to start the test. The test ended after 5 minutes and 26 seconds, and the test data showed 18.04%.
From the above tests, we found that the moisture in breads with higher moisture content is more unevenly distributed, which causes the bread to be crispy and not crispy, making them crispier than breads with the same higher moisture content, and their measurement time is often longer.
Precautions
1. The bread crumbs should be small enough and torn into thin strips to ensure that the moisture in the bread is completely dried. Try to spread them evenly on the tray and do not simply stack them together.
2. The bread moisture meter has its usage environment restrictions. Please use it within the environmental conditions specified in the product manual and do not operate it in harsh environments.
